Ingredients
- Lamb (cubed)
- Onion (chopped)
- Carrots (chopped)
- Zucchini (chopped)
- Tomato (diced)
- Vegetable Broth
- Cumin
- Coriander
- Turmeric
- Cinnamon
- Harissa paste (optional, for heat)
- Couscous
- Mint (fresh, chopped)
- Cilantro (fresh, chopped)
- Olive Oil
- Salt
- Pepper
Instructions
- Season lamb with salt, pepper, cumin, coriander, turmeric, and cinnamon.
- Heat olive oil in a large pot or Dutch oven. Brown the lamb in batches, then set aside.
- Sauté onion until softened. Add carrots and zucchini, cook for a few minutes.
- Return the lamb to the pot. Add diced tomato, vegetable broth, and harissa paste (if using).
