Ingredients

  • Lamb (cubed)
  • Onion (chopped)
  • Carrots (chopped)
  • Zucchini (chopped)
  • Tomato (diced)
  • Vegetable Broth
  • Cumin
  • Coriander
  • Turmeric
  • Cinnamon
  • Harissa paste (optional, for heat)
  • Couscous
  • Mint (fresh, chopped)
  • Cilantro (fresh, chopped)
  • Olive Oil
  • Salt
  • Pepper

Instructions

  1. Season lamb with salt, pepper, cumin, coriander, turmeric, and cinnamon.
  2. Heat olive oil in a large pot or Dutch oven. Brown the lamb in batches, then set aside.
  3. Sauté onion until softened. Add carrots and zucchini, cook for a few minutes.
  4. Return the lamb to the pot. Add diced tomato, vegetable broth, and harissa paste (if using).
  5. Bring to a simmer, then cover and cook on low heat for at least 2 hours, or until the lamb is very tender.
  6. Prepare couscous according to package directions.
