Ingredients

  • Sweet potato, peeled and diced
  • Spinach, fresh
  • Smoked salmon, flaked
  • Onion, thinly sliced
  • Garlic, minced
  • Olive oil
  • Fresh dill, chopped
  • Cottage cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a pan, sauté onions and garlic in olive oil until softened.
  3. Add diced sweet potato and cook until slightly tender.
  4. Stir in spinach until wilted.
  5. In a bowl, whisk cottage cheese.
  6. Season with salt and pepper.
  7. Pour the cottage cheese mixture over the sweet potato and spinach.
  8. Top with flaked smoked salmon and chopped dill.
  9. Bake in the preheated oven for 20-25 minutes, or until the frittata is set and golden brown.
