Ingredients

  • Sweet potato, peeled and diced
  • Spinach, fresh
  • Smoked salmon
  • Dill, fresh, chopped
  • Onion, diced
  • Garlic, minced
  • Cottage cheese
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté onion and garlic in olive oil until softened. Add diced sweet potato and cook until slightly tender.
  3. Add spinach and cook until wilted.
  4. In a bowl, whisk cottage cheese.
  5. Pour the cottage cheese mixture over the sweet potato and spinach in the pan. Gently fold in the smoked salmon and dill.
  6. Season with salt and pepper.
  7. Bake in the preheated oven for 20-25 minutes, or until the frittata is set and golden brown.
  8. Let cool slightly before serving.
