Ingredients

  • 12 large shrimp, cooked and peeled
  • 8 rice paper wrappers
  • 1 cup cooked rice noodles
  • 1/2 cup shredded carrots
  • 1/2 cup thinly sliced cucumber
  • 1/2 cup chopped fresh mint
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped cabbage
  • 2 tbsp rice vinegar
  • 1 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp maple syrup
  • Pinch of red pepper flakes (optional)

Instructions

  1. Prepare the dipping sauce: In a small bowl, whisk together rice vinegar, lime juice, soy sauce, sesame oil, maple syrup, and red pepper flakes (if using).
  2. Fill a shallow dish with warm water.
  3. Dip one rice paper wrapper into the water for a few seconds until softened.
  4. Lay the softened rice paper wrapper flat on a clean surface.
  5. Place a small amount of rice noodles, carrots, cucumber, mint, cilantro, cabbage, and 3 shrimp in the center of the wrapper.
  6. Fold the sides of the wrapper inward, then tightly roll up the wrapper from the bottom to enclose the filling.
  7. Repeat with the remaining rice paper wrappers and fillings.
  8. Serve immediately with the peanut-free dipping sauce.
