Ingredients

- 8 rice paper wrappers
- 1 cup cooked rice noodles

- 1/4 cup chopped cabbage
- 2 tbsp rice vinegar
- 1 tbsp lime juice
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp maple syrup
- Pinch of red pepper flakes (optional)
Instructions
- Prepare the dipping sauce: In a small bowl, whisk together rice vinegar, lime juice, soy sauce, sesame oil, maple syrup, and red pepper flakes (if using).
- Fill a shallow dish with warm water.
- Dip one rice paper wrapper into the water for a few seconds until softened.
- Lay the softened rice paper wrapper flat on a clean surface.
- Place a small amount of rice noodles, carrots, cucumber, mint, cilantro, cabbage, and 3 shrimp in the center of the wrapper.
- Fold the sides of the wrapper inward, then tightly roll up the wrapper from the bottom to enclose the filling.
- Repeat with the remaining rice paper wrappers and fillings.
- Serve immediately with the peanut-free dipping sauce.
