
Mediterranean Tuna & White Bean Salad Stuffed Tomatoes

Ingredients
- 4 large tomatoes
- 2 cans tuna, packed in water, drained
- 1 cup cooked white beans (cannellini or navy)
- 1/4 cup chopped cucumber
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Optional: Kalamata olives, halved
Instructions
- Cut the tops off the tomatoes and scoop out the pulp, leaving a hollowed-out tomato shell. Reserve the pulp.
- In a bowl, combine the drained tuna, white beans, cucumber, red onion, parsley, olive oil, lemon juice, oregano, salt, and pepper.
- If desired, add some of the reserved tomato pulp to the salad mixture.
- Gently mix all ingredients.
- Spoon the tuna and white bean salad into the tomato shells.
- If desired, garnish with Kalamata olives.
- Serve immediately or chill for later.
