Ingredients

  • Beef, thinly sliced
  • Chayote, julienned
  • Carrots, julienned
  • Cucumber, thinly sliced
  • Rice, cooked
  • Sesame oil
  • Soy sauce alternative

  • Gochujang (Korean chili paste) - use a brand with no allergens
  • Sesame seeds
  • Spinach, blanched
  • Tofu, pressed and diced

Instructions

  1. Marinate beef in a mixture of soy sauce alternative, sesame oil, minced garlic, and grated ginger.
  2. Stir-fry the marinated beef until cooked through.
  3. In a separate pan, sauté chayote and carrots until slightly tender.
  4. Cook the blanched spinach and tofu.
  5. Prepare the rice in bowls.
  6. Arrange the beef, chayote, carrots, cucumber, spinach, and tofu over the rice.
  7. Add a dollop of gochujang.
  8. Sprinkle with sesame seeds and serve.
