- Salt and pepper to taste
- 2 duck eggs
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and bell pepper; cook until softened, about 5 minutes.
- Add diced sweet potato and jalapeño (if using); cook until the sweet potato starts to soften, about 8-10 minutes.
- Stir in cooked chickpeas, smoked paprika, cumin, salt, and pepper. Cook for another 5 minutes, stirring occasionally, until the sweet potato is tender and slightly caramelized.
- Make two wells in the hash and crack a duck egg into each well.
- Cook the eggs to your desired doneness. For a runny yolk, cook for about 3-4 minutes.
