Ingredients

  • 1 large sweet potato, peeled and diced
  • 1 cup cooked chickpeas
  • 1/2 cup chopped onion
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 duck eggs
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and bell pepper; cook until softened, about 5 minutes.
  3. Add diced sweet potato and jalapeño (if using); cook until the sweet potato starts to soften, about 8-10 minutes.
  4. Stir in cooked chickpeas, smoked paprika, cumin, salt, and pepper. Cook for another 5 minutes, stirring occasionally, until the sweet potato is tender and slightly caramelized.
  5. Make two wells in the hash and crack a duck egg into each well.
  6. Cook the eggs to your desired doneness. For a runny yolk, cook for about 3-4 minutes.
  7. Garnish with fresh cilantro and serve immediately.
