Ingredients

  • 1 large sweet potato, peeled and diced
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh herbs (dill, parsley, chives)
  • 1/4 cup chopped red onion
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 6 large eggs
  • 1/4 cup water

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in an oven-safe skillet over medium heat. Sauté red onion until softened, about 3 minutes.
  3. Add diced sweet potato and cook until slightly softened, about 5-7 minutes.
  4. Stir in spinach and cook until wilted, about 2 minutes.
