Ingredients

  • 1 lb ground beef
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/4 cup soy sauce
  • 2 tbsp gochujang (Korean chili paste)
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 head of cabbage, thinly sliced
  • 1/4 cup kimchi, chopped
  • 2 green onions, thinly sliced
  • 1 tbsp sesame seeds
  • Large lettuce leaves (for wrapping), such as butter or romaine

Instructions

  1. In a large skillet, heat sesame oil over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned.
  2. Add garlic and ginger and cook for 1 minute more.
  3. Stir in soy sauce, gochujang, rice vinegar, and brown sugar. Simmer for 5 minutes, or until sauce has thickened.
  4. In a bowl, combine sliced cabbage, kimchi, and green onions. Toss to combine.
  5. To assemble the wraps, spoon the beef mixture into lettuce leaves. Top with kimchi slaw and sprinkle with sesame seeds.
