Mediterranean Baked Salmon with Roasted Vegetables and Quinoa

Ingredients

  • Salmon fillets
  • Cherry tomatoes
  • Cucumber, diced
  • Red onion, sliced
  • Zucchini, chopped
  • Bell peppers (various colors), chopped
  • Fresh dill, chopped
  • Lemon, sliced
  • Olive oil
  • Quinoa
  • Salt
  • Pepper
  • Dried oregano
  • Dried basil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse and pat dry salmon fillets.
  3. In a baking dish, toss cherry tomatoes, diced cucumber, sliced red onion, chopped zucchini, and bell peppers with olive oil, salt, pepper, oregano, and basil.
  4. Place salmon fillets on top of the vegetables.
  5. Drizzle salmon with olive oil, season with salt, pepper, and place lemon slices on top.
  6. Bake for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender.
  7. While salmon is baking, cook quinoa according to package directions.
  8. Serve the baked salmon and roasted vegetables over a bed of quinoa. Garnish with fresh dill.
