Ingredients

  • 1 large sweet potato, peeled and diced
  • 1 cup fresh spinach
  • 4 oz smoked salmon
  • 2 eggs
  • 1 tbsp olive oil
  • 1/4 cup chopped red onion
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potato and red onion; cook, stirring occasionally, until sweet potato is tender and slightly browned (about 8-10 minutes).
  3. Stir in spinach and smoked paprika; cook until spinach wilts (about 2 minutes). Season with salt and pepper.
  4. Push the hash to one side of the skillet. Crack eggs into the empty space.
  5. Cook eggs to desired doneness (sunny-side up, over easy, or scrambled).
  6. Divide hash among plates. Top with smoked salmon and cooked eggs.
  7. Garnish with fresh dill and serve immediately.
