Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced sweet potato and red onion; cook, stirring occasionally, until sweet potato is tender and slightly browned (about 8-10 minutes).
- Stir in spinach and smoked paprika; cook until spinach wilts (about 2 minutes). Season with salt and pepper.
- Push the hash to one side of the skillet. Crack eggs into the empty space.
