Ingredients

  • Beef stew meat, cubed
  • Onion, chopped
  • Garlic, minced
  • Carrots, chopped
  • Zucchini, chopped
  • Canned diced tomatoes
  • Vegetable broth
  • Cumin
  • Coriander
  • Turmeric
  • Cinnamon
  • Salt and pepper to taste
  • Quinoa, cooked
  • Fresh parsley, chopped

Instructions

  1. In a large pot or Dutch oven, brown the beef over medium-high heat.
  2. Remove the beef and set aside.
  3. Add onion and garlic to the pot and sauté until softened.
  4. Add carrots and zucchini and cook for a few minutes.
  5. Return the beef to the pot.
  6. Add diced tomatoes, vegetable broth, cumin, coriander, turmeric, cinnamon, salt, and pepper.
  7. Bring to a simmer, then reduce heat and cover.
  8. Cook for at least 1.5-2 hours, or until the beef is tender.
  9. Serve over cooked quinoa and garnish with fresh parsley.
