Ingredients

  • 1 large sweet potato, diced
  • 1 cup fresh spinach
  • 4 oz smoked salmon
  • 1 avocado
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: Red pepper flakes

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced sweet potato with olive oil, salt, and pepper on a baking sheet. Roast for 20 minutes, or until tender and slightly browned.
  2. While sweet potatoes roast, prepare the avocado crema. In a small bowl, mash the avocado with Greek yogurt and lemon juice. Season with salt and pepper.
  3. Once sweet potatoes are cooked, add spinach to the baking sheet and toss to wilt for about 2 minutes.
  4. Divide the sweet potato and spinach hash between two plates. Top with smoked salmon and a dollop of avocado crema.
  5. Season with red pepper flakes for a spicy kick (optional).
