Sweet Potato & Spinach Hash with Smoked Salmon & Avocado Crema (Mediterranean-Inspired)

Ingredients
- 1 large sweet potato, diced
- 1 cup fresh spinach
- 4 oz smoked salmon
- 1 avocado
- 1/4 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: Red pepper flakes
Instructions
- Preheat oven to 400°F (200°C). Toss diced sweet potato with olive oil, salt, and pepper on a baking sheet. Roast for 20 minutes, or until tender and slightly browned.
- While sweet potatoes roast, prepare the avocado crema. In a small bowl, mash the avocado with Greek yogurt and lemon juice. Season with salt and pepper.
- Once sweet potatoes are cooked, add spinach to the baking sheet and toss to wilt for about 2 minutes.
- Divide the sweet potato and spinach hash between two plates. Top with smoked salmon and a dollop of avocado crema.
- Season with red pepper flakes for a spicy kick (optional).
