Ingredients

  • Sweet potato, peeled and diced
  • Spinach, washed
  • Smoked salmon, flaked
  • Fresh dill, chopped
  • Fresh chives, chopped
  • Cottage cheese
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté diced sweet potato in olive oil until softened, about 5-7 minutes.
  3. Add spinach and cook until wilted, about 2 minutes.
  4. In a bowl, combine cottage cheese, dill, chives, salt, and pepper.
  5. Pour the cottage cheese mixture over the sweet potato and spinach in an oven-safe skillet.
  6. Top with flaked smoked salmon.
