Ingredients

  • 12 large shrimp, cooked and peeled
  • 1 ripe avocado, sliced
  • 1 cup shredded carrots
  • 1 cup shredded cabbage
  • 1/2 cup chopped cucumber
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 12 rice paper wrappers
  • Peanut-free Hoisin sauce (store-bought or homemade using sunflower seed butter)

Instructions

  1. Prepare all the vegetables and shrimp.
  2. Fill a shallow dish with warm water.
  3. Dip a rice paper wrapper in the water for a few seconds until softened.
  4. Lay the softened rice paper on a flat surface.
  5. Arrange a few shrimp, avocado slices, carrots, cabbage, cucumber, mint, and cilantro in the center of the wrapper.
  6. Fold in the sides of the wrapper and then roll tightly, like a burrito.
  7. Repeat with the remaining ingredients.
  8. Serve immediately with peanut-free hoisin sauce for dipping.
