Ingredients

  • 12 large shrimp, cooked and peeled
  • 8 rice paper wrappers
  • 1 cup cooked rice
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh cilantro
  • Peanut-Free Dipping Sauce: 2 tablespoons rice vinegar, 1 tablespoon lime juice, 1 tablespoon coconut aminos, 1 teaspoon sesame oil, pinch of red pepper flakes

Instructions

  1. Prepare the dipping sauce by whisking together all ingredients in a small bowl.
  2. Fill a shallow dish with warm water. Dip a rice paper wrapper in the water for a few seconds until softened.
  3. Lay the softened wrapper flat on a clean surface. Place a small amount of rice in the center, followed by shrimp, carrots, cucumber, mint, and cilantro.
  4. Fold the sides of the wrapper over the filling, then roll tightly from the bottom up.
  5. Repeat with remaining wrappers and ingredients.
  6. Serve immediately with the peanut-free dipping sauce.
