- 1 pound ground beef
- 1 large onion, chopped
- 2 cloves garlic, minced

- 1 teaspoon ground coriander

- 1/4 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper (optional)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup vegetable broth
- 1 cup fresh spinach
- 1/2 cup chopped dried apricots
- Salt and pepper to taste
- 1 cup quinoa, cooked according to package directions
- Fresh parsley for garnish
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
