Ingredients

  • 1 cup cooked quinoa
  • 4 oz grilled chicken breast, sliced

  • 1 cup cherry tomatoes, halved

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the quinoa according to package directions. Let cool.
