Ingredients

  • 8 ounces ground pork
  • 1 tablespoon fish sauce
  • 1 teaspoon soy sauce
  • 1/2 teaspoon garlic, minced
  • 1/4 teaspoon black pepper
  • 1 package rice paper wrappers
  • 1 cup cooked rice
  • 1 cup shredded carrots
  • 1 cup chopped kale
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped cilantro
  • Dipping Sauce:
  • 1/4 cup lime juice
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a bowl, combine the ground pork, fish sauce, soy sauce, minced garlic, and black pepper. Mix well.
  2. Cook the pork mixture in a skillet over medium heat until cooked through, breaking it up with a spoon.
  3. Prepare the dipping sauce by whisking together all dipping sauce ingredients in a small bowl.
  4. Soak a rice paper wrapper in warm water for a few seconds until softened.
  5. Lay the softened rice paper wrapper on a flat surface.
  6. Place a spoonful of rice, a portion of pork, carrots, kale, cucumber, and cilantro in the center of the wrapper.
  7. Fold the sides of the wrapper over the filling, then roll it up tightly like a burrito.
  8. Repeat with the remaining wrappers and filling.
  9. Serve the rolls immediately with the dipping sauce.
