Ingredients

  • 1 pound pork tenderloin, thinly sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 cup chopped cabbage
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced green onions
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 8 ounces rice noodles
  • 1/4 cup chopped peanuts
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving
  • Red pepper flakes (optional)

Instructions

  1. In a bowl, marinate pork with soy sauce, oyster sauce, and cornstarch for 15 minutes.
  2. Cook rice noodles according to package directions.
  3. Heat vegetable oil in a wok or large skillet over high heat.
  4. Stir-fry pork until browned and cooked through. Remove from the wok.
  5. Add cabbage and mushrooms to the wok and stir-fry for 2-3 minutes.
  6. Add green onions, garlic, and ginger and stir-fry for 1 minute.
  7. Return the pork to the wok. Add the cooked rice noodles and toss to combine.
  8. Serve immediately, garnished with peanuts, cilantro, lime wedges, and red pepper flakes (if using).
