Ingredients

  • Tofu, extra-firm, pressed and cubed
  • Cabbage, shredded
  • Carrots, shredded
  • Cucumber, thinly sliced
  • Green onions, chopped
  • Gochujang (Korean chili paste)
  • Soy sauce
  • Sesame oil
  • Rice vinegar
  • Garlic, minced
  • Ginger, grated
  • Lettuce leaves (for wrapping)
  • Sesame seeds (optional)

Instructions

  1. Marinate tofu in a mixture of soy sauce, sesame oil, rice vinegar, garlic, and ginger for at least 15 minutes.
  2. In a bowl, mix shredded cabbage, shredded carrots, and sliced cucumber.
  3. Whisk together gochujang, a splash of soy sauce, and a touch of sesame oil for the glaze.
  4. Heat a pan with a little oil and stir-fry the marinated tofu until golden brown and slightly crispy.
  5. Add the gochujang glaze to the tofu and toss to coat.
  6. Fill lettuce leaves with the cabbage mixture and glazed tofu.
