  • Salt and pepper to taste
  • 1/4 cup unsweetened coconut flakes
  • Fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a skillet over medium heat.
  2. Add diced sweet potato and red onion; cook until softened, about 5-7 minutes.
  3. Add crumbled tofu, cumin, turmeric, salt, and pepper to the skillet. Cook, stirring occasionally, until the tofu is lightly browned, about 5 minutes.
  4. Stir in spinach and cook until wilted, about 1 minute.
