Ingredients

  • 4 large ripe tomatoes
  • 2 cans tuna in water, drained
  • 1 chayote, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: A sprinkle of dried oregano

Instructions

  1. Slice the tops off the tomatoes and scoop out the pulp, leaving a sturdy tomato shell. Discard the pulp or reserve for another use.
  2. In a bowl, combine the drained tuna, diced chayote, cucumber, olives, and parsley.
  3. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  4. Pour the dressing over the tuna mixture and gently toss to combine.
  5. Spoon the tuna salad into the tomato shells.
  6. Sprinkle with dried oregano, if desired. Serve chilled.
