Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 cup fresh spinach, chopped
  • 4 ounces smoked salmon, flaked
  • 4 large eggs
  • 1/4 cup goat cheese, crumbled
  • 1/4 cup chopped green onions
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in an oven-safe skillet over medium heat.
  3. Add diced sweet potatoes and cook until softened, about 8-10 minutes.
  4. Add spinach and cook until wilted, about 2 minutes.
  5. In a bowl, whisk eggs with salt and pepper.
  6. Pour egg mixture over the sweet potatoes and spinach in the skillet.
  7. Sprinkle smoked salmon and goat cheese over the top.
  8. Bake for 15-20 minutes, or until the eggs are set and the top is lightly golden.
